Birthday Cookies with Sprinkles

Growing up in Idaho, my birthdays often came with the possibility of snow! Regardless of the weather, I was never really a fan of birthday cake. There was something about it that never quite sat right with me, which is why I always preferred something more fun, like birthday cookies with sprinkles! These cookies scream “happy birthday” without the need for me to scrape off loads of icing.

Birthday Cake Cookies Recipe

Luckily, I married someone who also isn’t a fan of birthday cake! Carter and I both prefer birthday cookies over any other dessert.

Thick Birthday Cake Cookies

The key to making these cookies so soft and chewy is using bread flour. Bread flour has more protein than regular all-purpose flour, giving the dough a denser texture.

These super soft birthday cookies with sprinkles are always a huge hit, and we love making them every March to celebrate our birthdays. This year was no different, so I wanted to share the recipe with you!

Birthday Cookies With Sprinkles

These soft and chewy cookies are a birthday-must every year!
Course Dessert

Ingredients
  

  • 3/4 cup Salted Butter
  • 1 cup sugar
  • 1 egg plus 1 egg yolk
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 package Instant Vanilla Pudding Mix (3.5 ounces)
  • 2 cups All-purpose Flour (or bread flour)
  • 1/2 cup Rainbow Sprinkles

Instructions
 

  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the butter and sugar until light and fluffy, about 2 minutes.
  • Beat in the egg, egg yolk, and vanilla until well combined.
  • Add the baking soda and salt, mix until incorporated.
  • Mix in the instant pudding mix for 30 seconds.
  • With the mixer on low speed, gradually add the flour and mix until just combined.
  • Fold in the sprinkles with a spatula.
  • Drop rounded tablespoons of dough onto ungreased baking sheets, about 2 inches apart.
  • Bake for 8 to 12 minutes, until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a minute, then transfer them to a wire rack to cool completely.
