I don’t think anyone ever “plans” to make banana bread. I know I at least don’t. Every time I make banana bread, it is usually because I sitting ripe bananas that I don’t want to go to waste. But, I am not complaining.

This banana bread is perfect during the holiday season. I love to make a few loaves and eat them throughout the week for a breakfast treat.
Prep Time 1 hour 20 minutes

Servings 1 Loaf

Ingredients
  

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 2 cups ripe mashed bananas (about three large)
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp Ceylon cinnamon
  • 1/2 tsp salt

Cinnamon Sugar Mix

  • 1/4 cup brown sugar
  • 2 tsp Ceylon cinnamon

Instructions
 

  • Preheat oven to 350°F. Grease a bread pan and set aside.
  • Using either a mixer or hand mixer, mix the butter, sugar and brown sugar together until combined. Add the eggs and vanilla. Mix until combined. Add mashed bananas and stir in gently until mixed.
  • In a separate bowl, combined flour, salt, baking powder, baking soda, and cinnamon.
  • Add dry ingredients to the wet ingredients and mix until evenly combined. Don't overmix.
  • Add a third of the batter to the pan and sprinkle a third of the cinnamon sugar on top. Repeat all three layers. Top bread with cinnamon sugar before baking.
  • Bake for 55- 65 minutes. Cover banana bread with foil for the last 15 minutes if banana bread becomes too dark.
  • Remove and let cool in the pan for ten minutes before transferring to a cooling rack.
  • Banana bread can be kept at room temperature for up to 5 days.
