Carter doesn’t love birthday cake and so when we first got married I wanted to find him a special treat I could make every year for his birthday. Now, what makes this recipe SO good is the Cookies and Creme Ice cream! I knew Carter loved funfetti and cookies and creme so I had to come up with a recipe that had both. Our other favorite cookie recipe is chocolate chip cookies.

These cookies are SO easy to make. Only three ingredients! The cookie part is made with a funfetti cake mix so these treats taste really similar to Ice Cream cake making it the perfect birthday treat for those who don’t love birthday cake!

Homemade Funfetti Ice Cream Sandwich

I have been making these birthday ice cream treats for years! Carter doesn't love birthday cake and so when we first got married I wanted to find him a special treat I could make every year for his birthday. These Birthday Cake Ice Cream Sandwiches are the best and we both look forward to them every year!

Ingredients
  

  • 2 boxes Funfetti Cake Mix
  • 4 Large Eggs
  • 2/3 cup Vegetable Oil
  • 1 carton Cookies and Cream Icecream

Instructions
 

Cookies

  • Preheat oven to 325 degrees. Lightly grease cookie sheet or line with a silicone baking mat or parchment paper.
  • Mix cake mix, eggs, and oil in a medium bowl until thoroughly combined. Beat 1 minute on medium speed. 
  • Using a medium cookie scoop, create 2-inch cookie dough balls. Place rolled cookie dough on cookie sheet; flatten slightly with your fingers or the back of a spoon.
  • Bake 10 to 12 minutes or until set. Let cool 2 minutes before removing to wire rack to cool completely.
  • Freeze Cookies.

Icecream Filling

  • Once the cookies are frozen add desired amount of cookies and ice cream.
  • Freeze.
