Homemade Funfetti Ice Cream Sandwich
I have been making these birthday ice cream treats for years! Carter doesn't love birthday cake and so when we first got married I wanted to find him a special treat I could make every year for his birthday. These Birthday Cake Ice Cream Sandwiches are the best and we both look forward to them every year!
Ingredients
- 2 boxes Funfetti Cake Mix
- 4 Large Eggs
- 2/3 cup Vegetable Oil
- 1 carton Cookies and Cream Icecream
Instructions
Cookies
- Preheat oven to 325 degrees. Lightly grease cookie sheet or line with a silicone baking mat or parchment paper.
- Mix cake mix, eggs, and oil in a medium bowl until thoroughly combined. Beat 1 minute on medium speed.
- Using a medium cookie scoop, create 2-inch cookie dough balls. Place rolled cookie dough on cookie sheet; flatten slightly with your fingers or the back of a spoon.
- Bake 10 to 12 minutes or until set. Let cool 2 minutes before removing to wire rack to cool completely.
- Freeze Cookies.
Icecream Filling
- Once the cookies are frozen add desired amount of cookies and ice cream.
- Freeze.
