Why We Love This Recipe

Living by the beach has its perks, and one of them is the laid-back lifestyle! That’s why my husband and I live for recipes that are not only quick to whip up but also perfect for making ahead. Plus, these hand pies pack a ton of flavor! They are so yummy in our favorite tzatziki sauce, also quick to make.

Ingredients:

  • 1 medium white onion, chopped
  • 3 large cloves garlic, minced
  • 1 pound ground beef
  • Greek seasoning
  • 1 pound potatoes, diced
  • 3 tablespoons olive oil, divided
  • Salt and pepper, to taste
  • Pie crusts (store-bought or homemade)
  • 1 egg, beaten
  • Optional: Crumbled feta cheese
  • Tzatziki sauce, for serving

Let’s Get Cooking!

Preheat and Prep: Start by heating your oven to 400°F.

Roast the Potatoes: Toss your diced potatoes with 2 tablespoons of olive oil, a sprinkle of salt, and a dash of pepper. Spread them on a baking sheet and roast for about 20-25 minutes. You’re looking for that lovely golden brown finish.

Sauté the Basics: While the potatoes are roasting, grab a skillet, and heat the remaining olive oil over medium heat. Add your chopped onion and sauté until translucent, about 5-10 minutes. Then, stir in the garlic just until it starts to brown — this really wakes up the flavor! I love using my non-toxic always pan because nothing will stick to it.

Brown the Beef: Toss in the ground beef, season it well with Greek seasoning (a mix of oregano, garlic, and a hint of cinnamon does the trick), and cook until it’s browned.

NON-TOXIC PAN

Mix it Up: In a large bowl, combine the browned beef, roasted potatoes, and if you’re feeling a bit fancy, throw in some crumbled feta.

Assemble the Pies: Cut your pie crust into desired shapes, spoon about 1/3 cup of the filling onto each piece, and fold it over to make a half-moon shape. Seal the edges with a fork, brush with beaten egg, and they’re ready to bake!

Bake the Pies: Pop them into the oven for another 20-25 minutes until they turn a pretty golden brown.

Serve and Enjoy: Serve these gorgeous hand pies hot from the oven with a side of cool, creamy tzatziki sauce.

Dinner is Served!

These hand pies are a hit every time, especially on those evenings when all you want is something quick, filling, and bursting with flavor. Plus, making them ahead means more time to enjoy the sunset and less time in the kitchen.

Making Them Ahead of Time

Making these Greek Ground Beef and Potato Hand Pies ahead of time is a breeze and perfect for those busy days when you want a delicious meal without the fuss. Simply prepare the pies as directed, but instead of baking them immediately, place them on a baking sheet lined with parchment paper and cover them tightly with plastic wrap. You can even make the filling and assemble later as well!

Store them in the refrigerator for up to two days. When you’re ready to enjoy them, remove the plastic wrap, and pop them directly into the preheated oven. No need to bring them to room temperature first; they bake beautifully straight from the fridge, making your mealtime both effortless and delightful.
